When what we see doesn’t match what we taste, it’s not just our mind that’s surprised; our palate is too. This little illusion, which plays on more than one sense, turns into a deliciously thrilling experience. 


At first glance, our Parmigiano Reggiano Mousse might look sweet and delicate, but it hides the bold, savory notes of a 24-month-aged Parmigiano Reggiano, traditionally enhanced by the gentle sweetness of pear and the balsamic hint of Modena vinegar. The main ingredient, the king of cheeses, reveals itself fully at the very first bite.
There’s no need to reinvent Parmigiano Reggiano. Its unmistakable character is more than enough to turn any recipe into something memorable. Still, it’s a challenge worth taking on. Whether we’ve succeeded is for you and your guests to decide as you share the joy of a mousse that is anything but ordinary.




 Preparation time: 10 minutes
 Servings: 4-6

Ingredients

250 g of cream cheese
100 g of Parmigiano Reggiano DOP 24 months Emilia Food Love
1 tablespoon of warm milk
Parmigiano Reggiano Crackers Emilia Food Love
Balsamic Vinegar of Modena IGP Emilia Food Love
Pears
Black pepper

Method

  1. Let the cream cheese soften at room temperature for about an hour. Transfer it to a bowl and mix in a tablespoon of warm milk to make it creamier.

  2. Add the grated 24-month Parmigiano Reggiano and stir until everything is well combined. Chill in the fridge for 10 minutes.
  3. Serve the mousse on our Parmigiano Reggiano Crackers, topping each bite with a slice of pear, a sprinkle of black pepper, and a few drops of our aged Balsamic Vinegar of Modena IGP.
